Grilled Turkey, Pepper Jack Cheese, and Bacon Sub Sandwich

I find that in the summer months I'm just not that into cooking big meals.  I don't ever seem as hungry for some reason and hate turning on the oven if I don't have to.  Whether I'm getting a weeknight dinner ready or prepping for a party, I turn more to making different types of salads and sandwiches.  They are quick to prepare and cool to eat.  Do you find yourself feeling the same way about food when it is hot and humid outside?


To keep the menu fresh, I like playing with different combinations of meats, cheeses, and other ingredients.  There are so many options that you don't have to ever feel like you're eating the same thing all season.

With so much to do during the summer, you don't need to be slaving away in the kitchen preparing meals when there are simple alternatives available.  Those minutes saved in the kitchen can be spent enjoying the outdoors as those summer days fade so fast.


One of my all-time favorites is a sub sandwich filled with grilled sliced turkey, pepper jack cheese, and freshly cooked bacon.  (My ham and green onion club sandwich comes in at a very close second.)  The sandwich involves just a few minutes standing over the grill pan to get the turkey ready and bacon fried, and comes together easily.

You can prepare just one for yourself at lunchtime or make many to serve family at dinner.  They are also great served up on a platter for a picnic or gathering as they make a nice presentation with that beautiful fresh lettuce peeking out from under the buns.


Also, if you don't have any sub buns, this recipe can be made on a hamburger or hot dog bun or even regular sandwich bread.  Use up what you have my friend.

GRILLED TURKEY + PEPPER JACK SUB

INGREDIENTS

  • Sliced turkey breast from the deli
  • Slices of pepper jack cheese
  • A couple freshly cooked slices of bacon
  • Green leaf lettuce
  • Sub roll



HOW TO MAKE A GRILLED TURKEY AND PEPPER JACK SUB

  1. Warm a square griddle over medium heat, then add slices of turkey in a single layer onto the pan.  When the meat begins to brown, flip it over to the other side.
  2. Meanwhile, slice open your sub roll and insert pieces of bacon and slices of pepper jack cheese on one side and your green leaf lettuce on the other.
  3. Remove the meat from the stove top when it is warmed and add it to the center of the sandwich.  The heat from the turkey should begin to melt the cheese.

Pair this delicious sandwich with potato chips, pasta salad, or a fruit cup for a filling lunch.
