This classic no-peek beef bake is an easy oven dinner made with stew meat, potatoes, and carrots baked low and slow in a savory gravy. Using pantry staples like onion soup mix and cream of celery soup, this hands-off recipe delivers tender beef and a comforting meal with very little prep.

This no-peek beef bake is one of those recipes.


It uses ordingary pantry ingredients, comes together quickly, and turns out the same way every time. Once it’s in the oven, you can step away knowing dinner is being handled.


The low temperature and long baking time do all the heavy lifting, leaving you with tender beef, soft vegetables, and a rich gravy with no stirring or babysitting required.

Ingredients At A Glance

  • Stew Meat - Buy it already cut from the butcher or cut your own chunks from a chuck roast.

  • Potatoes - Use about 5 or 6 medium sized russet or Yukon Gold potatoes, cut into large chunks (1 1/2 to 2 inches) so they hold their shape without turning mushy.

  • Carrots - Between 4 to 6 large carrots cut into thick sticks

  • Red Pepper Flakes - Gives a little heat to balance the gravy without making it spicy.

  • Salt and Pepper

  • Cream of Celery Soup - Use a can or make your own from fresh celery. You could substitute cream of mushroom soup if you'd like.

  • Brown Beef Gravy Mix

  • Onion Soup Mix - One packet or 4 Tablespoons of this homemade mix

  • Beef Broth - Substitute water if you're out of broth.

How to Prepare the No-Peek Beef Bake


STEP 1: Preheat the oven to 300°F.

STEP 2: Arrange the stew meat, potato chunks, and carrot sticks in a 9x13 baking dish distributing them evenly so everything cooks at the same pace. Season with salt, pepper, and red pepper flakes.

STEP 3: In a bowl, whisk together the cream of celery soup, brown gravy mix, onion soup mix, and beef broth until smooth. Pour the mixture over the meat and vegetables. (I like to use an extra large measuring cup or batter bowl with a spout for easy mixing and pouring.)

STEP 4: Cover the dish tightly with foil or a lid. This step is important as the sealed environment allows the steam and gravy to tenderize the meat.

STEP 5: Place the dish in the oven and bake for 3 hours, resisting the urge to peek. When it's done, the beef should be fork tender, the vegetables soft but intact, and the gravy rich and savory.

  • 2 pounds stew meat
  • 2 - 2 1/2 pounds potatoes, cut into chunks
  • 1 pound carrots, cut into thick sticks
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 can cream of celery soup
  • 1 packet brown beef gravy mix
  • 1 packet onion soup mix
  • 1 (14.5 ounce) can beef broth


INSTRUCTIONS


STEP 1: Preheat oven to 300°F.

STEP 2: Spread out the stew meat, potatoes, and carrots in a 9x13 baking dish. Season to taste with salt, pepper, and red pepper flakes.

STEP 3: In a bowl, whisk together the cream of celery soup, brown gravy mix, onion soup mix, and beef broth until combined. Pour evenly over the meat and vegetables.

STEP 4: Cover the dish tightly with foil or a lid. Transfer to the oven and bake for 3 hours. Keep the dish covered the entire time. When finished, beef should be tender and vegetables fully cooked with thick gravy coating everything.
