Some recipes prove that good food doesn’t have to be complicated.


I can vividly remember my dad making nachos in the oven when I was a kid - Saturday night movies, Super Bowl Sunday, or any evening that called for something warm and salty. They seemed so simple, but yet so good.


Oven baked nachos aren’t exactly uncommon. A quick internet search turns up trays loaded with ground beef, beans, tomatoes, and just about everything else under the sun. Tortilla chips dumped onto a baking sheet, layered with toppings and cheese, then baked in the oven for ten minutes. They look impressive, but halfway through you’re dealing with soggy chips and they are messy to eat.


What I’ve come to realize is that while my dad’s version, uncomplicated and basic, is actually the rarity. In a world that’s always pushing for bigger and better, the simplest ideas are often the ones that get overlooked.


These nachos are made one chip at a time. Bite-sized, easy to pop into your mouth, and topped with nothing more than cheese and a slice of jalapeño. They’re ready in under five minutes, stay crisp, and don’t leave a mess behind.


As a quick snack or an easy to prepare party food, these oven baked nachos are a sure to please whomever you serve.

Ingredients At A Glance


  • Bite-sized tortilla chips: I prefer the smaller chips because they are easy to eat in one bite, but regular rounds or scoops work just as well.

  • Block of cheese: Mild or sharp cheddar work best.

  • Pickled jalapeño peppers: Found in a jar in the pickle aisle. Skip if you’re not a fan of heat.

How to Make Oven Baked Nachos


STEP 1: Preheat your oven to 350°F.


STEP 2: Arrange the tortilla chips in a single layer on a baking sheet. Make as many or as few as you’d like.


STEP 3: Cut the cheese into small squares slightly smaller than the size of your chip since it will spread as it melts. Place one square on each chip. (This knife works so well to slice through blocks of cheese.)


STEP 4: Top with a slice of jalapeño if you like a little heat. If not, leave them plain.


STEP 5: Bake for 4 to 6 minutes, just until the cheese has melted. The timing will depend on how thick your cheese is, so keep an eye on them.

Food doesn’t have to be overdone or Instagram-worthy to be good. These simple oven-baked nachos are proof that sometimes uncomplicated is just what you’re looking for.
