I'm In Love....with Leaf Lettuce

You may have noticed that I had some pretty fancy lettuce on my Grilled Turkey, Bacon, and Pepper Jack sub last week.   I typically use common iceberg lettuce for my salads and on sandwiches, but recently was introduced to my new "love"....leaf lettuce.  Do you use it?

My salad normally consists of, well, lettuce...no tomatoes, typically no cucumbers.....just lettuce.  So finding a way to make a salad a little more interesting is great.  In case you aren't aware, the leaf lettuce comes fresh in the produce section, is sold by the pound, and is relatively the same price as a head of iceberg lettuce.  I think that it has a lot more taste than iceberg lettuce, too.  And I love how much fancier it looks....I'm always a fan of a nice presentation!

To show off my new favorite food, I made this super simple salad.....In addition to the leaf lettuce, I used some leftover breaded chicken and a handful of dried cranberries.  I'm really pleased with how it turned out.  It is easy to make, tasty, and pretty healthy, too....well, until I poured the Ranch dressing over it!.
