Pistachio Coffee Cake for St. Patrick's Day

What is more perfect for St. Patrick's Day than a food that turns out a little green?  My mom has been making this Pistachio Coffee Cake for as long as I can remember each year for the holiday.  It is simple to make and turns out moist and delicious.  And best of all, it can be eaten for breakfast or served for dessert!

PISTACHIO COFFEE CAKE


BATTER INGREDIENTS:

1 package butter recipe yellow cake mix
1 package instant pistachio pudding
4 eggs
1/4 cup water
1/4 cup canola oil
1 cup sour cream

TOPPING INGREDIENTS

1/2 cup brown sugar
2 teaspoons cinnamon
1/2 cup sugar
1 cup chopped walnuts









How to Make Pistachio Coffee Cake 



Grease a 9 by 13 inch glass baking dish.


Mix the batter ingredients in one bowl and the topping ingredients in a second bowl.


Spoon in half of the batter into the pan and top it with half of the topping mix.  Then gently spread the rest of the batter on top and cover with the other half of the topping.








Bake the coffee cake at 400 degrees for 30 to 35 minutes or until a toothpick inserted into the center of the cake comes out clean.  Cool the cake on a wire rack.






When you slice into the cake you can see the nice layered effect of the batter and topping.  You can serve it slightly warm from the oven or let it cool completely.  Slice a piece for a simple breakfast or add a scoop of ice cream and turn it into a fabulous dessert!
