Amazing Chocolate Chip Cookies

When I was a child, I can remember my grandma baking these chocolate chip cookies every year for Christmas.   Even though I was young, I knew that there was something special about this recipe over all other chocolate chip cookie recipes.  She always told me it was because she added vanilla pudding.  The original recipe actually came off of a box of JELLO brand vanilla pudding.  I’ve tried other recipes for chocolate chip cookies that include vanilla pudding, but these are still the best tasting to me.

So here is the recipe for Pudding Chip Cookies

2 ¼ cups unsifted flour
1 teaspoon baking soda
1 cup butter, softened
¼ cup sugar
¾ cup light brown sugar
1 (4 serving) package of vanilla instant pudding
1 teaspoon vanilla
2 eggs
1-12 ounce package semi sweet chocolate chips (I used Hershey's dark chocolate chips and the cookies tasted delicious!)

Mix flour and baking soda in a bowl.

In another large bowl, combine the butter, sugar, brown sugar, pudding mix and vanilla. 
Beat until smooth and creamy.  

Beat in eggs. 

Gradually add the flour mixture to the other mixture, then stir in the chocolate chips. 
The batter will be stiff. 

Drop from a teaspoon onto ungreased baking sheet about 2 inches apart.  I used a teaspoon sized ice cream scoop so that the cookies would be the same size.  You may want to make them larger than a teaspoon, though, because they turn out very small.  (I don't remember them being this size when my grandma made them.) Just watch them carefully and adjust the baking time for the larger cookie.

Bake at 375° for 8 to 10 minutes.  Cool on a wire rack. 

Makes about 7 dozen cookies when you make them with a teaspoon of dough.
